Olives cannot be directly eaten after plucking because there are some substances in the skin that gives them a bitter taste. In order to remove the bitter taste you will have to follow a long procedure which is as follows:
1. Store the olives in a jar of water with 10% salt for six months.
2. After six months make a small cut in each olive with a knife and then soak them in water for twenty days. Change the water every day.
3. Taste the olives and if they are not bitter you are done. If not, soak them in vinegar for a few hours.
